Ingredients

- 2 lbs beef stew meat, cubed
- 4 large potatoes, diced
- 3 carrots, sliced
- 1 cup frozen peas
- 1 onion, chopped
- 3 cloves garlic, minced
- 4 cups beef broth
- 2 tbsp tomato paste
- 1 tsp thyme
- Salt and pepper to taste
Instructions
- Place all ingredients except peas into the slow cooker.
- Cook on low for 8 hours or high for 4 hours until beef is tender.
- Add peas 30 minutes before serving and stir well.
- Season with additional salt and pepper if needed.
Notes
- You can substitute ground beef for stew meat for quicker prep.
- Serve with crusty bread for a complete meal.
