Instructions

- Stir in diced potatoes, diced tomatoes, and creamed corn. Pour in broth, stir to combine, and bring to a boil. Reduce heat and simmer for about 20 minutes until potatoes are tender.
- Stir in shredded cheddar cheese and sour cream until fully melted and creamy. Season with salt and pepper to taste. Add optional toppings like green onions, bacon, or jalapeños, if desired.
