Ingredients

  • 1 pound beef stew meat, cubed
  • 2 tablespoons olive oil
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 3 cups potatoes, diced
  • 2 carrots, sliced
  • 2 celery stalks, sliced
  • 4 cups beef broth
  • 1 cup heavy cream
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Heat olive oil in a large pot over medium heat. Add beef cubes and cook until browned. Remove and set aside.
  2. In the same pot, add diced onion and cook until translucent. Add minced garlic and cook for another minute.
  3. Add potatoes, carrots, and celery. Cook for 5 minutes, stirring occasionally.
  4. Return beef to the pot. Pour in beef broth and bring to a boil.
  5. Reduce heat and simmer until beef is tender and vegetables are cooked, about 30 minutes.
  6. Stir in heavy cream, smoked paprika, salt, and pepper. Cook for another 5 minutes until heated through.
  7. Garnish with fresh parsley before serving.
