Ingredients

  • 1 pound ground beef or stew beef chunks
  • 1 onion, diced
  • 3 carrots, sliced
  • 2 celery stalks, chopped
  • 1 can corn kernels
  • 3 cups beef broth
  • 1 can diced tomatoes
  • 2 cloves garlic, minced
  • 1 teaspoon chili powder
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. In a large pot, brown the beef over medium heat until cooked through. Remove and set aside.
  2. In the same pot, sauté onions, garlic, carrots, and celery until tender.
  3. Add the beef back to the pot, then stir in corn, diced tomatoes, beef broth, chili powder, paprika, salt, and pepper.
  4. Bring to a boil, then reduce heat and simmer for 30-40 minutes to develop flavors.
  5. Garnish with fresh parsley before serving.
