- 1 pound ground beef or stew beef chunks
- 1 onion, diced
- 3 carrots, sliced
- 2 celery stalks, chopped
- 1 can corn kernels
- 3 cups beef broth
- 1 can diced tomatoes
- 2 cloves garlic, minced
- 1 teaspoon chili powder
- 1 teaspoon paprika
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- In a large pot, brown the beef over medium heat until cooked through. Remove and set aside.
- In the same pot, sauté onions, garlic, carrots, and celery until tender.
- Add the beef back to the pot, then stir in corn, diced tomatoes, beef broth, chili powder, paprika, salt, and pepper.
- Bring to a boil, then reduce heat and simmer for 30-40 minutes to develop flavors.
- Garnish with fresh parsley before serving.

- You can substitute ground beef with shredded cooked chicken for variation.
