Instructions
- Preheat oven to 375°F (190°C).
- Slice each chicken breast horizontally to create a pocket, being careful not to cut all the way through.
- Season chicken with salt, pepper, and Italian seasoning.
- In a skillet, heat olive oil over medium heat. Add garlic and sauté until fragrant.
- Add spinach and cook until wilted. Remove from heat.
- Stuff each chicken pocket with spinach mixture and shredded cheese.
- Secure with toothpicks if needed.
- Place stuffed chicken breasts on a baking sheet and bake for 25-30 minutes until cooked through and golden.
