- 20 large pasta shells
- 1 cup ricotta cheese
- 2 cups fresh spinach, chopped
- 1 cup shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 2 cloves garlic, minced
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions
- Preheat oven to 375°F (190°C).
- Cook pasta shells in salted boiling water until al dente. Drain and set aside.
- In a skillet, heat olive oil and sauté garlic until fragrant. Add chopped spinach and cook until wilted. Remove from heat.
- In a bowl, mix ricotta cheese, sautéed spinach, half of the mozzarella, Parmesan, salt, and pepper.
- Stuff each cooked shell with the ricotta mixture and place in a baking dish.
- Top with remaining mozzarella cheese and bake for 20-25 minutes until bubbly and golden.
Notes
- You can add a pinch of red pepper flakes for some heat.
- Use fresh spinach for the best flavor and texture.
- Serve with a simple green side salad for a complete meal.
