Ingredients

  • 20 large pasta shells
  • 1 cup ricotta cheese
  • 2 cups fresh spinach, chopped
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Cook pasta shells in salted boiling water until al dente. Drain and set aside.
  3. In a skillet, heat olive oil and sauté garlic until fragrant. Add chopped spinach and cook until wilted. Remove from heat.
  4. In a bowl, mix ricotta cheese, sautéed spinach, half of the mozzarella, Parmesan, salt, and pepper.
  5. Stuff each cooked shell with the ricotta mixture and place in a baking dish.
  6. Top with remaining mozzarella cheese and bake for 20-25 minutes until bubbly and golden.
