Ingredients

- 1 pound lean ground beef
- 2 cups cooked rice (preferably brown or jasmine rice)
- 2 large zucchinis, diced
- 1 small red onion, chopped
- 3 cloves garlic, minced
- 2 tablespoons olive oil
- 1 teaspoon dried oregano
- 1 teaspoon ground cumin
- 1 teaspoon paprika
- Salt and pepper to taste
- Fresh parsley and lemon wedges for garnish
Instructions
- Cook your preferred rice according to package instructions. Set aside once cooked.
- Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add chopped red onion and sauté until translucent. Add diced zucchini and cook for about 5 minutes until tender. Remove from skillet and set aside.
- In the same skillet, add remaining olive oil. Add minced garlic and cook for 30 seconds. Add ground beef with seasonings and cook until browned and fully cooked through.
- Return zucchini and onion to the skillet with the beef. Mix well and cook for another 2-3 minutes to meld flavors.
- Serve the beef and zucchini mixture over the warm rice. Garnish with fresh parsley and lemon wedges.

- Use basmati or jasmine rice for a fragrant option.
- Adjust spices according to your taste preference.
- Leftovers can be stored in an airtight container for up to 3 days.
- For extra flavor, add crumbled feta or Greek yogurt topping.
