Ingredients

  • 1 pound lean ground beef
  • 2 cups cooked rice (preferably brown or jasmine rice)
  • 2 large zucchinis, diced
  • 1 small red onion, chopped
  • 3 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 teaspoon dried oregano
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Fresh parsley and lemon wedges for garnish

Instructions

  1. Cook your preferred rice according to package instructions. Set aside once cooked.
  2. Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add chopped red onion and sauté until translucent. Add diced zucchini and cook for about 5 minutes until tender. Remove from skillet and set aside.
  3. In the same skillet, add remaining olive oil. Add minced garlic and cook for 30 seconds. Add ground beef with seasonings and cook until browned and fully cooked through.
  4. Return zucchini and onion to the skillet with the beef. Mix well and cook for another 2-3 minutes to meld flavors.
  5. Serve the beef and zucchini mixture over the warm rice. Garnish with fresh parsley and lemon wedges.
