- 1 pound cooked chicken, shredded
- 4 cups chicken broth
- 1 onion, chopped
- 3 carrots, sliced
- 3 celery stalks, sliced
- 3 cloves garlic, minced
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- 1 teaspoon thyme
- Salt and pepper to taste
- 2 tablespoons olive oil
- 1 cup cooked pasta or rice (optional)
Instructions
- In a large pot, heat olive oil over medium heat. Add onion, carrots, and celery; sauté until tender.
- Add garlic and cook for another minute.
- Pour in chicken broth and bring to a boil.
- Reduce heat and add shredded chicken, oregano, basil, thyme, salt, and pepper.
- Simmer for 20 minutes to allow flavors to meld.
- Optional: add cooked pasta or rice and cook for another 5 minutes.
- Serve hot garnished with fresh herbs if desired.
Notes
- You can substitute turkey or use plant-based chicken alternatives for a different variation.
- For extra flavor, add a splash of lemon juice before serving.
