Instructions
- In a large mixing bowl, combine the natural peanut butter and maple syrup. Stir until smooth and well blended. Add vanilla extract and a pinch of sea salt, mixing again.
- Gradually stir in the rolled oats until the mixture is thick and sticky. Fold in chocolate chips and optional add-ins like shredded coconut or chopped nuts.
- Press the mixture evenly into a lined or greased 8×8-inch baking dish. Use a spatula or your hands to flatten and smooth the top.
- Refrigerate for at least 2 hours or until firm to set the bars.
- Remove from the fridge and cut into 8-12 bars or squares. Serve immediately or store for later.
Notes
- For best results, store the bars in an airtight container in the refrigerator for up to 1 week.
- For longer storage, wrap individually and freeze for up to 3 months.
