- 2 large crisp apples (such as Fuji or Honeycrisp), peeled and diced

- 1 teaspoon ground cinnamon

- 1 large egg (or flaxseed egg for vegan version)
- 2 tablespoons unsweetened almond milk or any milk of your choice
- 1 teaspoon baking powder
- A pinch of salt
- Cooking spray or a light drizzle of olive oil for the air fryer basket
Instructions
- Peel, core, and dice the apples into small pieces. Toss with cinnamon, coconut sugar, vanilla, and lemon juice if desired.
- In a separate bowl, whisk together flour, baking powder, salt, egg, and milk until smooth. Gently fold in the apple mixture until evenly coated.
- Preheat the air fryer to 375°F (190°C). Lightly spray the air fryer basket with cooking spray or brush with oil.
- Using a spoon or scoop, form small, flat rounds of batter and place them in the basket with space for air circulation. Lightly spray the tops with cooking spray.
- Cook for 8-10 minutes, flipping halfway through, until the fritters are golden and crispy. Serve warm with optional toppings.
Notes
- Use gluten-free flour options like almond or coconut flour for a GF version.
- Vegan? Replace the egg with a flaxseed meal mixed with water (1 tablespoon flaxseed meal + 3 tablespoons water).
- Add chopped nuts or raisins into batter for extra texture and flavor.
