- 2 large sweet potatoes, peeled and sliced

- Salt and pepper to taste
- 2 tablespoons olive oil

Instructions
- Preheat oven to 400°F (200°C). Lightly grease a baking dish.
- In a skillet, heat olive oil over medium heat. Add onion and garlic; sauté until translucent.
- Add ground turkey, paprika, thyme, salt, and pepper. Cook until browned and cooked through.
- Spread sliced sweet potatoes evenly in the baking dish and top with cooked turkey mixture.
- Sprinkle shredded cheese over the top.
- Cover with foil and bake for 30 minutes. Remove foil and bake for an additional 10 minutes, until cheese is bubbling and golden.
- Garnish with chopped parsley before serving.
