Instructions

  1. Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the chicken pieces and cook until browned and cooked through, about 5-7 minutes. Remove from the skillet and set aside.
  2. In the same skillet, add minced garlic and grated ginger; sauté for about 30 seconds until fragrant. Add pineapple chunks and cook for another 2-3 minutes, allowing the pineapple to caramelize slightly and infuse flavor.
  3. Mix together the soy sauce, rice vinegar, and brown sugar in a small bowl. Pour this mixture into the skillet with the pineapple and aromatics. Let it cook for 2 minutes, stirring constantly to dissolve the brown sugar.
  4. Add the cooked chicken back into the skillet. Pour in the cornstarch slurry and stir well. Cook for another 2-3 minutes until the sauce thickens and coats the chicken and pineapple evenly.
