- 1 lb (450 g) chicken thighs or breasts, cut into bite-sized pieces
- 1 cup fresh pineapple chunks or canned pineapple in juice
- 1/4 cup brown sugar
- 3 tablespoons soy sauce
- 2 tablespoons rice vinegar or apple cider vinegar
- 2 cloves garlic, minced
- 1 teaspoon ginger, grated
- 1 tablespoon cornstarch mixed with 2 tablespoons water (for thickening)
- 2 tablespoons vegetable oil
- Optional: sliced green onions and sesame seeds for garnish
Instructions
- Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the chicken pieces and cook until browned and cooked through, about 5-7 minutes. Remove from the skillet and set aside.
- In the same skillet, add minced garlic and grated ginger; sauté for about 30 seconds until fragrant. Add pineapple chunks and cook for another 2-3 minutes, allowing the pineapple to caramelize slightly and infuse flavor.
- Mix together the soy sauce, rice vinegar, and brown sugar in a small bowl. Pour this mixture into the skillet with the pineapple and aromatics. Let it cook for 2 minutes, stirring constantly to dissolve the brown sugar.
- Add the cooked chicken back into the skillet. Pour in the cornstarch slurry and stir well. Cook for another 2-3 minutes until the sauce thickens and coats the chicken and pineapple evenly.
Notes
- Use fresh pineapple for the best flavor, but canned pineapple works well if drained thoroughly.
- Adjust the amount of brown sugar for sweetness to suit your preference.
- For a spicy kick, add red pepper flakes during sautéing.
- If you prefer a crispy texture, try coating the chicken in cornstarch before frying or baking.
