Instructions
- Preheat your oven to 350°F (175°C). Grease a loaf pan with butter or nonstick spray and set aside.
- In a large mixing bowl, mash the ripe bananas until smooth. Add the honey, vanilla extract, eggs, and melted butter, whisking until well combined.
- In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add the dry mixture into the wet ingredients, folding gently until just combined. Fold in chopped nuts or chocolate chips if desired.
- Pour the batter into the prepared loaf pan. Bake for 55-60 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the bread to cool in the pan for 10 minutes, then transfer to a wire rack. Slice and serve warm or at room temperature.
Notes
- Use very ripe bananas for a sweeter flavor.
- Mix the batter just until combined to keep the bread light and fluffy.
