- 1 cup all-purpose flour
- 1/2 cup shredded Cheddar cheese
- 2 large eggs
- 1/4 cup milk
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 teaspoon paprika (optional)
- Oil for frying (vegetable or canola oil)
Instructions
- In a large bowl, whisk together flour, baking powder, salt, black pepper, and paprika.
- In a separate bowl, beat eggs and mix in milk. Combine with dry ingredients until smooth.
- Fold in corn kernels and shredded Cheddar cheese until evenly distributed.
- Heat oil in a deep skillet over medium-high heat, testing with a small batter drop for readiness.
- Spoon about 2 tablespoons of batter into hot oil for each fritter, without overcrowding the pan.
- Fry for 2–3 minutes per side until golden brown and crispy. Drain on paper towels.
- Serve immediately with your favorite dipping sauces or accompaniments.
Notes
- For gluten-free version, substitute regular flour with gluten-free all-purpose flour or almond flour.
- Enhance flavor by adding chopped green onions, jalapeños, or cooked bacon bits.
- Great for serving with spicy salsa, sour cream, or aioli.
- Reheat in the oven or air fryer to preserve crispiness; avoid microwaving.
