Instructions
- Preheat your oven to 350°F (175°C) and line a baking pan with parchment paper or lightly grease it.
- In a large bowl, mash the ripe bananas until smooth.
- Add honey, melted coconut oil, and vanilla extract to the mashed bananas. Stir well to combine.
- Mix in the rolled oats, cinnamon, salt, and optional nuts or chocolate chips. Stir until evenly combined.
- Transfer the mixture into your prepared baking dish. Press it down firmly to create an even layer.
- Bake for 20-25 minutes or until edges turn golden brown and a toothpick inserted in the center comes out clean.
- Allow the bars to cool completely in the pan. Cut into squares and store in an airtight container.
