- 4 boneless, skinless chicken breasts
- 1 pound baby potatoes or small potatoes, halved

Instructions
- Place chicken breasts and halved potatoes into the crockpot.
- In a small bowl, mix olive oil, minced garlic, Italian seasoning, salt, and pepper.
- Pour the mixture over the chicken and potatoes, tossing to coat evenly.
- Cover and cook on low for 6-8 hours or high for 3-4 hours until chicken is cooked through and potatoes are tender.
- In the last 15 minutes, sprinkle grated Parmesan over the dish and let it melt.
- Serve garnished with chopped parsley and extra Parmesan if desired.

- Adjust seasoning to taste.
- For extra flavor, add a splash of chicken broth before cooking.
- Serve with steamed vegetables or a fresh side salad.
