  • 2 cups of fresh spinach, chopped
  • 1 cup ripe tomatoes, diced
  • 3 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1/2 teaspoon red pepper flakes (optional)
  • Salt and black pepper to taste
  • Fresh basil or parsley for garnish
  • Parmesan or vegan cheese (optional)

Instructions

  1. Cook the spinach pasta according to package instructions until al dente. Drain and set aside.
