- 200g of spinach pasta (or any preferred pasta)
- 2 cups of fresh spinach, chopped
- 1 cup ripe tomatoes, diced
- 3 cloves garlic, minced
- 2 tablespoons olive oil
- 1/2 teaspoon red pepper flakes (optional)
- Salt and black pepper to taste
- Fresh basil or parsley for garnish
- Parmesan or vegan cheese (optional)
Instructions
- Cook the spinach pasta according to package instructions until al dente. Drain and set aside.
- In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté until fragrant, about 1 minute.
- Add the diced tomatoes and cook for 3-4 minutes until they soften.
- Stir in the chopped fresh spinach and cook for 2-3 minutes until wilted. Season with salt, black pepper, and red pepper flakes if desired.
- Add the cooked pasta to the skillet and toss to combine. Sprinkle with grated Parmesan or vegan cheese if using.
Notes
- Use freshly chopped spinach for the best flavor and color.
- Reserve some pasta water to loosen the sauce if needed.
- Add chopped olives or sun-dried tomatoes for extra flavor.
- Make it vegan by skipping cheese or using plant-based alternatives.
