Ingredients

  • 4 salmon fillets
  • 2 ripe mangoes, diced
  • 1 red bell pepper, diced
  • 1/2 red onion, finely chopped
  • 1 jalapeño, minced
  • 1/4 cup fresh cilantro, chopped
  • Juice of 1 lime
  • Salt and black pepper to taste
  • 2 tablespoons olive oil

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Season salmon fillets with salt, pepper, and 1 tablespoon olive oil. Place on a baking sheet.
  3. Bake for 12-15 minutes until cooked through.
  4. Meanwhile, combine mango, bell pepper, red onion, jalapeño, cilantro, lime juice, salt, and pepper in a bowl to make the salsa.
  5. Once salmon is baked, top with fresh mango salsa before serving.
