- 4 salmon fillets
- 2 ripe mangoes, diced
- 1 red bell pepper, diced
- 1/2 red onion, finely chopped
- 1 jalapeño, minced
- 1/4 cup fresh cilantro, chopped
- Juice of 1 lime
- Salt and black pepper to taste
- 2 tablespoons olive oil
Instructions
- Preheat oven to 400°F (200°C).
- Season salmon fillets with salt, pepper, and 1 tablespoon olive oil. Place on a baking sheet.
- Bake for 12-15 minutes until cooked through.
- Meanwhile, combine mango, bell pepper, red onion, jalapeño, cilantro, lime juice, salt, and pepper in a bowl to make the salsa.
- Once salmon is baked, top with fresh mango salsa before serving.
Notes
- You can serve this dish with a side of steamed rice or greens for a complete meal.
- Adjust the spice level by adding more or less jalapeño.
