Instructions
- Season chicken breasts with salt, pepper, thyme, and rosemary.
- Heat olive oil in a skillet over medium heat; sear chicken on both sides until golden.
- Place seared chicken in the slow cooker.
- In a bowl, mix garlic, lemon juice, lemon zest, and chicken broth.
- Pour mixture over chicken in the slow cooker.
- Add rice around the chicken.
- Cook on low for 4-6 hours or until chicken is tender and rice is cooked.
- Remove chicken, shred with forks, and return to the slow cooker.
- Garnish with fresh parsley before serving.
