  • Total Time: 20 minutes prep + 6-8 hours cook
  • Yield: 4-6 servings

Ingredients

Scale
  • 1 lb ground beef
  • 1 small onion, finely chopped
  • 1/2 cup bread crumbs
  • 1 egg
  • 2 cloves garlic, minced
  • 1 tsp Worcestershire sauce
  • Salt and black pepper to taste
  • 1 cup beef broth
  • 2 tbsp soy sauce
  • 1 tbsp tomato paste
  • 1 tbsp cornstarch (optional, for thickening gravy)
  • Fresh parsley for garnish

Instructions

  1. Combine ground beef, chopped onion, bread crumbs, egg, garlic, Worcestershire sauce, salt, and pepper in a large bowl. Mix thoroughly and shape into 1-1.5 inch meatballs.
  2. Place meatballs into the slow cooker. Whisk together beef broth, soy sauce, and tomato paste, then pour over the meatballs. Cover and cook on low for 6-8 hours or high for 3-4 hours.
  3. Optional: Remove meatballs, whisk cornstarch into a small amount of cold water, then stir into the slow cooker. Cook uncovered on high for 10-15 minutes until thickened. Return meatballs to the gravy before serving.

Notes

  • Use gluten-free bread crumbs and Worcestershire sauce for gluten-free version.
  • Stir in additional herbs like thyme or rosemary for extra flavor.
  • For a spicier kick, add red pepper flakes or hot sauce to the gravy.
