Instructions
- Preheat oven to 375°F (190°C).
- Slice each chicken breast to create a pocket for stuffing.
- In a skillet, heat olive oil over medium heat. Add garlic and mushrooms, cook until softened.
- In a bowl, mix cooked mushrooms, cream cheese, Parmesan, salt, and pepper.
- Stuff each chicken breast with the mushroom mixture and secure with toothpicks if necessary.
- Place stuffed chicken on a baking dish, brush with olive oil, and bake for 25-30 minutes until golden and cooked through.
- Garnish with fresh parsley before serving.
