- 2 lbs boneless, skinless chicken thighs or breasts
- 1 cup soy sauce
- 1/2 cup honey or brown sugar
- 1/4 cup rice vinegar
- 3 cloves garlic, minced
- 1 tablespoon grated ginger
- 2 teaspoons cornstarch (optional, for thickening)
- Sesame seeds and chopped green onions for garnish
Instructions
- Place chicken in the slow cooker.
- Mix soy sauce, honey, rice vinegar, garlic, and ginger in a bowl. Pour over chicken.
- Cook on low for 6-7 hours or high for 3-4 hours until chicken is tender.
- Shred the chicken using two forks.
- Optional: Mix cornstarch with a little water and stir into the sauce. Cook on high for 15 minutes until thickened.
- Serve over rice, garnished with sesame seeds and green onions.

- Adjust sweetness by adding more honey or sugar.
- Serve with steamed vegetables or rice for a complete meal.
