- 1 pound Italian sausage links or bulk sausage
- 3 bell peppers (red, green, yellow), sliced
- 1 large onion, sliced
- 3 cloves garlic, minced
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- 2 tablespoons olive oil
- Fresh parsley, chopped (for garnish)
Instructions
- Heat olive oil in a skillet over medium heat and brown the sausage until cooked through. Slice into pieces.
- Add sliced peppers, onions, garlic, Italian seasoning, salt, and pepper to the slow cooker.
- Place browned sausage into the slow cooker with the vegetables.
- Cover and cook on low for 4-6 hours until vegetables are tender and flavors meld.
- Garnish with chopped parsley before serving.
Notes
You can use chicken sausage for a lighter option or add crushed red pepper for extra spice. Serve alone or over rice or pasta for a complete meal.
