Instructions
- In a mixing bowl, whisk together eggs, pumpkin puree, milk, cinnamon, nutmeg, and maple syrup.
- Heat a skillet over medium heat and melt butter.
- Dip bread slices into the pumpkin mixture, soaking well.
- Cook slices on the skillet until golden brown on both sides.
- Top with caramelized pumpkin chunks, dust with powdered sugar, and garnish with mint leaves.
- Serve warm with additional syrup if desired.
