- 4 slices ham
- 1 cup shredded Gruyere cheese
- 4 large eggs
- 1/2 cup hollandaise sauce

Instructions
- Preheat oven to 375°F (190°C). Roll out puff pastry and cut into four rectangles. Place on a baking sheet lined with parchment.
- Bake pastry for 15 minutes or until golden brown.
- Arrange ham slices over baked pastry, sprinkle with cheese, and bake for another 5 minutes.
- Meanwhile, prepare hollandaise sauce if homemade or warm store-bought.
- Remove pastry from oven, make small indentations in the center of each, and carefully crack an egg into each hole.
- Bake for an additional 8-10 minutes until eggs are cooked to your preferred runny consistency.
- Top with hollandaise sauce, garnish with chives, and season with salt and pepper. Serve immediately.
