- 1 cup graham cracker crumbs
- 3 tablespoons sugar
- 6 tablespoons butter, melted
- 16 ounces cream cheese, softened
- 2/3 cup sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- Fresh strawberries and caramel sauce for topping
Instructions
- Preheat oven to 325°F (160°C). Line a muffin tin with paper liners.
- Mix graham cracker crumbs, 3 tablespoons sugar, and melted butter. Press about a tablespoon into the bottom of each liner to form a crust.
- In a bowl, beat cream cheese and sugar until smooth. Add eggs one at a time, then vanilla, mixing well.
- Spoon the cream cheese mixture over the crusts, filling each liner nearly to the top.
- Bake for 18-20 minutes until set. Cool completely before refrigerating for at least 2 hours.
- Top with fresh strawberries and caramel sauce before serving.
Notes
- Can be made a day ahead and stored in the refrigerator.
- Feel free to garnish with your favorite fruits or toppings.
