  • 1 cup graham cracker crumbs
  • 3 tablespoons sugar
  • 6 tablespoons butter, melted
  • 16 ounces cream cheese, softened
  • 2/3 cup sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • Fresh strawberries and caramel sauce for topping

Instructions

  1. Preheat oven to 325°F (160°C). Line a muffin tin with paper liners.
  2. Mix graham cracker crumbs, 3 tablespoons sugar, and melted butter. Press about a tablespoon into the bottom of each liner to form a crust.
  3. In a bowl, beat cream cheese and sugar until smooth. Add eggs one at a time, then vanilla, mixing well.
  4. Spoon the cream cheese mixture over the crusts, filling each liner nearly to the top.
  5. Bake for 18-20 minutes until set. Cool completely before refrigerating for at least 2 hours.
  6. Top with fresh strawberries and caramel sauce before serving.
