- 1 1/2 cups graham cracker crumbs
- 1/4 cup granulated sugar

- 16 oz cream cheese, softened

- 3 large eggs
- 1 teaspoon vanilla extract
- 1 cup sour cream
- 1 cup caramel sauce
- 2 large apples, thinly sliced
- 1/4 cup brown sugar
- 1 teaspoon cinnamon
Instructions
- Preheat oven to 350°F (175°C). Mix graham cracker crumbs, sugar, and melted butter; press into a 9-inch square baking pan to form crust.
- Bake crust for 10 minutes. Remove and let cool.
- In a large bowl, beat cream cheese and sugar until smooth. Add eggs one at a time, then vanilla and sour cream. Mix until well combined.
- Pour cheesecake filling over cooled crust. Bake for 40-45 minutes until set. Cool completely.
- Meanwhile, sauté apple slices with brown sugar and cinnamon until tender and caramelized.
- Spread caramel sauce over cooled cheesecake. Top with caramelized apples. Drizzle additional caramel if desired.
- Chill in refrigerator for at least 2 hours before slicing and serving.
