  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter, melted
  • 16 oz cream cheese, softened
  • 1 cup granulated sugar
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup sour cream
  • 1 cup caramel sauce
  • 2 large apples, thinly sliced
  • 1/4 cup brown sugar
  • 1 teaspoon cinnamon

Instructions

  1. Preheat oven to 350°F (175°C). Mix graham cracker crumbs, sugar, and melted butter; press into a 9-inch square baking pan to form crust.
  2. Bake crust for 10 minutes. Remove and let cool.
  3. In a large bowl, beat cream cheese and sugar until smooth. Add eggs one at a time, then vanilla and sour cream. Mix until well combined.
  4. Pour cheesecake filling over cooled crust. Bake for 40-45 minutes until set. Cool completely.
  5. Meanwhile, sauté apple slices with brown sugar and cinnamon until tender and caramelized.
  6. Spread caramel sauce over cooled cheesecake. Top with caramelized apples. Drizzle additional caramel if desired.
  7. Chill in refrigerator for at least 2 hours before slicing and serving.
