Ingredients

  • 2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/2 teaspoon salt
  • 2 large eggs
  • 1/2 cup vegetable oil
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat oven to 350°F (175°C). Grease a donut pan.
  2. In a large bowl, mix pumpkin, eggs, oil, and vanilla until well combined.
  3. In another bowl, whisk together flour, sugars, baking soda, cinnamon, nutmeg, and salt.
  4. Gradually add dry ingredients to wet, mixing until just combined.
  5. Fill donut molds about 3/4 full.
  6. Bake for 15-18 minutes until a toothpick inserted comes out clean.
  7. Let donuts cool, then optionally glaze with a simple icing.
