- 1 cup canned pumpkin puree
- 2 cups all-purpose flour
- 1/2 cup granulated sugar
- 1/4 cup brown sugar
- 1 teaspoon baking soda
- 1 teaspoon cinnamon
- 1/2 teaspoon nutmeg
- 1/2 teaspoon salt
- 2 large eggs
- 1/2 cup vegetable oil
- 1 teaspoon vanilla extract
Instructions
- Preheat oven to 350°F (175°C). Grease a donut pan.
- In a large bowl, mix pumpkin, eggs, oil, and vanilla until well combined.
- In another bowl, whisk together flour, sugars, baking soda, cinnamon, nutmeg, and salt.
- Gradually add dry ingredients to wet, mixing until just combined.
- Fill donut molds about 3/4 full.
- Bake for 15-18 minutes until a toothpick inserted comes out clean.
- Let donuts cool, then optionally glaze with a simple icing.
Notes
- Ensure not to overmix the batter to keep donuts tender.
- Glaze can be made with confectioners’ sugar and milk for added sweetness.
