- 1 cup unsalted butter, softened
- 1 1/2 cups sugar
- 2 large eggs
- 2 teaspoons vanilla extract
- 2 1/2 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon baking powder

- 1 cup diced apple (peeled and cored)
- 1/4 cup cinnamon
- 1/4 cup granulated sugar (for coating)
Instructions
- Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
- In a large bowl, cream together softened butter and sugar until fluffy.
- Add eggs one at a time, mixing well after each addition. Stir in vanilla extract.
- In a separate bowl, whisk together flour, baking soda, baking powder, and salt.
- Gradually add dry ingredients to wet ingredients, mixing until just combined. Fold in diced apples.
- In a small bowl, mix cinnamon with granulated sugar.
- Shape dough into approximately 1-inch balls. Roll each ball in cinnamon sugar mixture and place on prepared baking sheets.
- Bake for 10-12 minutes, or until edges are golden brown. Let cool slightly before transferring to a wire rack.
