- 1 1/2 cups all-purpose flour
- 1/2 cup granulated sugar
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, melted
- 2 large eggs
- 1/2 cup buttermilk
- 1 teaspoon vanilla extract
- 1 cup chopped fresh apples
- 2 tablespoons brown sugar (for topping)
- 1 teaspoon ground cinnamon (for topping)
Instructions
- Preheat oven to 375°F (190°C). Line a muffin tin with paper liners.
- In a large bowl, whisk together flour, sugar, baking powder, baking soda, cinnamon, and salt.
- In a separate bowl, combine melted butter, eggs, buttermilk, and vanilla. Mix well.
- Pour wet ingredients into dry ingredients and fold until just combined. Gently fold in chopped apples.
- Divide batter evenly among muffin cups. Mix brown sugar and cinnamon and sprinkle over each muffin.
- Bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean.
- Allow muffins to cool for 5 minutes before transferring to a wire rack. Serve warm or at room temperature.
Notes
For extra flavor, add a handful of chopped nuts or raisins. Store muffins in an airtight container for up to 2 days or freeze for longer storage.
