- 1 1/2 cups powdered sugar
- 2 tablespoons apple cider
- 1/2 teaspoon cinnamon
Instructions
- Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
- In a bowl, whisk together flour, baking powder, baking soda, cinnamon, ginger, and salt.
- In a separate large bowl, cream butter and brown sugar until fluffy. Beat in egg, apple cider, and vanilla.
- Gradually add dry ingredients to wet ingredients, mixing until combined.
- Drop spoonfuls of batter onto prepared baking sheets, spaced evenly. Bake for 10-12 minutes until edges are golden.
- Allow cookies to cool on a wire rack completely.
- For the filling, beat butter until smooth. Gradually add powdered sugar, apple cider, and cinnamon until creamy.
- Spread filling on the flat side of half the cookies and top with remaining cookies to form sandwiches.
