- 1 pound large shrimp, peeled and deveined
- 1/2 cup corn starch
- 2 eggs, beaten
- 1/2 cup walnuts, toasted
- 1/4 cup honey
- 2 tablespoons soy sauce
- 1 tablespoon lemon juice
- 1 teaspoon cornstarch mixed with 1 teaspoon water (optional, for thickening)
Instructions
- Dip shrimp in beaten eggs, then coat with corn starch.
- Fry the shrimp in hot oil until golden and crispy, about 2-3 minutes. Drain on paper towels.
- In a small saucepan, combine honey, soy sauce, lemon juice, and bring to a simmer.
- Add toasted walnuts to the sauce and stir to coat.
- If desired, add cornstarch mixture to thicken the sauce slightly.
- Toss the fried shrimp in the honey walnut sauce until well coated.
- Serve immediately garnished with extra walnuts and fresh herbs.
Notes
- For extra crunch, double coat the shrimp with corn starch before frying.
- Adjust sweetness by adding more or less honey as preferred.
