Crispy, Cheesy Smashburger Quesadillas are the perfect quick 20-minute dinner, combining juicy smashburger patties with melted cheese folded into a crispy tortilla. Ideal for busy weeknights, this flavorful twist on quesadillas turns a burger favorite into a cheesy delight. Easy to prepare and satisfying, these quesadillas are versatile and customizable for all tastes.

  • Total Time: 20 minutes
  • Yield: 4 servings

Ingredients

Scale
  • 1 lb ground beef or smashburger patties
  • 4 large flour tortillas
  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 1 small onion, diced
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste
  • Sour cream and salsa (optional, for serving)

Instructions

  1. Heat a skillet over medium-high heat and add a drizzle of olive oil. Add the ground beef or smashburger patties, season with garlic powder, smoked paprika, salt, and pepper. Press down to flatten and cook 2-3 minutes per side until crispy and browned.
  2. Remove cooked patties and set aside. In the same skillet, place a flour tortilla, spread a handful of cheddar and Monterey Jack cheeses over half. Top with a cooked burger patty, sprinkle diced onions, then add more cheese. Fold the tortilla to enclose the fillings.
  3. Cook over medium heat for 2-3 minutes until golden brown and crispy on the bottom. Flip carefully with a spatula and cook the other side until cheese is melted and both sides are crispy. Repeat with remaining tortillas and fillings.

Notes

  • Ensure the burgers are cooked well before assembling the quesadillas for best flavor and texture.
  • You can customize the fillings with jalapeños, tomatoes, or bacon bits for added flavor.
  • Use whole wheat tortillas to add fiber or vegetarian substitutes like black beans for a meatless version.
