Instructions
- Mix the leftover mashed potatoes, shredded cheddar cheese, Parmesan, egg, garlic powder, onion powder, paprika, salt, and pepper in a large bowl until well combined.
- Scoop out portions of the mixture and shape them into small balls or puffs. Place on a parchment-lined baking sheet and sprinkle with chopped parsley if desired.
- Preheat the oven to 400°F (200°C). Lightly spray the puffs with olive oil or cooking spray.
- Bake for 20-25 minutes or until golden and crispy, turning halfway through for even baking.
