Instructions
- Heat olive oil in a large pot over medium heat.
- Add onion and garlic; cook until translucent.
- Stir in carrots, celery, and zucchini; cook for 5 minutes.
- Add chopped tomatoes, vegetable broth, thyme, salt, and pepper.
- Bring to a boil, then reduce heat and simmer for 25 minutes.
- Garnish with fresh parsley before serving.
