- 1 package of cheese or spinach ravioli (about 9 oz)
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1 cup cherry tomatoes, halved
- 2 cups fresh spinach
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- Salt and pepper to taste
- Fresh basil or parsley for garnish
Instructions
- Cook the ravioli according to package instructions until al dente. Drain and set aside.
- In a large skillet, heat olive oil over medium heat. Add minced garlic and cook until fragrant, about 1 minute.
- Add cherry tomatoes and cook until they soften, about 2-3 minutes.
- Stir in fresh spinach and cook until wilted, about 1-2 minutes.
- Pour in heavy cream, stirring to combine. Simmer for 2-3 minutes until slightly thickened.
- Fold in cooked ravioli and Parmesan cheese. Season with salt and pepper to taste.
- Garnish with fresh herbs and serve hot.
Notes
- You can add cooked chicken or shrimp for extra protein.
- Adjust the cream to make the sauce thinner or thicker according to preference.
