- 2 lbs chicken breasts or thighs, cut into chunks
- 3 tbsp butter
- 1 cup heavy cream
- 2 tbsp tomato paste
- 4 garlic cloves, minced
- 1 tsp smoked paprika
- 1 tsp cumin
- Salt and pepper to taste
- Chopped fresh parsley or cilantro for garnish
Instructions
- Heat 2 tbsp of butter in a large skillet over medium heat.
- Add chicken pieces and cook until golden brown and cooked through. Remove and set aside.
- In the same skillet, add remaining butter, garlic, smoked paprika, and cumin. Sauté for 1 minute.
- Stir in tomato paste and cook for another minute.
- Pour in heavy cream, stirring constantly until sauce thickens slightly.
- Add cooked chicken back into the skillet, coating with the sauce. Season with salt and pepper.
- Simmer for 5 minutes until flavors meld. Garnish with chopped herbs and serve hot.
Notes
- Adjust spice levels with more paprika or chili flakes for heat.
- Use chicken thighs for juicier, more flavorful meat.
