Instructions
- Preheat your oven to 375°F (190°C). Season chicken breasts with salt, pepper, and Italian seasoning. Sear in a skillet with olive oil for 3-4 minutes per side until golden. Remove and set aside.
- Sauté chopped onion and minced garlic until fragrant and translucent. Add heavy cream, then bring to a simmer. Stir in mozzarella, Parmesan, and chopped spinach until cheese melts and spinach wilts, forming a creamy sauce.
- Place seared chicken breasts in a baking dish. Pour the spinach sauce evenly over the chicken. Sprinkle additional mozzarella and Parmesan on top, and add red pepper flakes if desired.
- Bake uncovered for 20-25 minutes until cooked through and bubbly. Rest for a few minutes before serving.
