- 20 large pasta shells
- 2 cups ricotta cheese
- 1.5 cups shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 2 cups fresh spinach, chopped
- 2 cloves garlic, minced
- 1 tablespoon olive oil
- Salt and pepper to taste
- 1 cup marinara sauce
Instructions
- Preheat oven to 375°F (190°C). Cook pasta shells according to package instructions until al dente. Drain and set aside.
- In a skillet, heat olive oil and sauté garlic until fragrant. Add chopped spinach and cook until wilted. Remove from heat.
- In a mixing bowl, combine ricotta, half of the mozzarella, Parmesan, sautéed spinach, salt, and pepper.
- Stuff each shell with the ricotta mixture and place in a baking dish.
- Top with marinara sauce and sprinkle remaining mozzarella cheese on top.
- Bake uncovered for 25-30 minutes until bubbly and golden.
Notes
- Feel free to add cooked ground meat or switch to vegan cheese for variety.
- Serve with a side salad for a complete meal.
