- 2 lbs boneless, skinless chicken breasts
- 1 packet ranch seasoning mix
- 1 cup shredded cheddar cheese
- 4 cups chicken broth
- 1 cup cooked bacon bits
- 3 oz cream cheese, softened
- 1 cup chopped green onions
- Salt and black pepper to taste
Instructions
- Place chicken breasts in the slow cooker and sprinkle with ranch seasoning mix.
- Add chicken broth and cook on low for 6-8 hours.
- Remove chicken, shred with two forks, and return to the slow cooker.
- Add cream cheese and cheddar cheese, stirring until melted and smooth.
- Stir in cooked bacon bits and chopped green onions.
- Season with salt and pepper to taste. Serve hot garnished with extra green onions.
Notes
- For a thicker soup, mash some of the shredded chicken after cooking.
- You can add vegetables like diced celery or carrots for extra nutrition.
- Use cooked bacon for easier preparation.
