- 2 lbs beef stew meat, cut into chunks
- 1 can coconut milk (13.5 oz)
- 1 large onion, chopped
- 3 cloves garlic, minced
- 2 tablespoons curry powder
- 1 teaspoon turmeric
- 1 teaspoon cumin
- 1 tablespoon olive oil
- Salt and pepper to taste
- Fresh cilantro for garnish
- Cooked rice for serving
Instructions
- Heat olive oil in a skillet over medium heat and brown the beef chunks until seared on all sides.
- Transfer beef to the slow cooker.
- In the same skillet, sauté onions and garlic until fragrant, then add curry powder, turmeric, cumin, salt, and pepper. Cook for 2 minutes.
- Pour the spice mixture into the slow cooker with the beef.
- Add coconut milk and stir to combine.
- Cook on low for 6-8 hours until the beef is tender and flavors meld.
- Garnish with fresh cilantro before serving over rice.
Notes
- Adjust spice levels to your preference by adding more curry powder or chili flakes.
- Can be cooked on high for 4 hours if short on time.
