- 4 large Yukon Gold potatoes, thinly sliced
- 4 cloves roasted garlic, minced
- 2 cups shredded sharp cheddar cheese
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 2 tablespoons unsalted butter
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon fresh thyme, chopped
Instructions
- Preheat oven to 375°F (190°C). Grease a baking dish with butter.
- Layer sliced potatoes in the dish, overlapping slightly. Season each layer with salt, pepper, and roasted garlic.
- In a saucepan, heat heavy cream and butter until warmed. Stir in cheddar and Parmesan until melted and smooth.
- Pour the cheese sauce evenly over the layered potatoes.
- Cover with foil and bake for 45 minutes. Remove foil and bake an additional 15 minutes until golden brown and bubbly.
- Garnish with chopped thyme before serving.
