A rich and creamy potato soup made with tender potatoes, onions, garlic, and a splash of cream, garnished with fresh herbs and bacon.

  • Total Time: 40 minutes
  • Yield: 4-6 servings

Ingredients

Scale
  • 4 large potatoes, peeled and diced
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 4 cups chicken or vegetable broth
  • 1 cup heavy cream
  • 2 tablespoons butter
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. In a large pot, melt butter over medium heat. Add chopped onions and cook until translucent.
  2. Add garlic and cook for another minute.
  3. Stir in diced potatoes and cook for 5 minutes.
  4. Pour in broth, bring to a boil, then reduce heat and simmer until potatoes are tender, about 20 minutes.
  5. Use an immersion blender to puree the soup until smooth, or transfer to a blender carefully.
  6. Stir in heavy cream, season with salt and pepper, and heat through.
  7. Serve hot, garnished with parsley and bacon bits.

Notes

  • You can substitute heavy cream with coconut milk for a dairy-free version.
  • For added flavor, stir in shredded cheese or chopped chives before serving.
