- 8 oz pasta (penne or spaghetti)
- 2 cups fresh spinach
- 1 cup sliced mushrooms
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1 cup grated Parmesan cheese
- 1/2 cup heavy cream
- Salt and pepper to taste
- Chopped fresh parsley for garnish
Instructions
- Cook pasta according to package instructions until al dente. Drain and set aside.
- Heat olive oil in a large skillet over medium heat. Add mushrooms and cook until golden brown, about 5 minutes.
- Add minced garlic and cook for 1 minute until fragrant.
- Stir in spinach and cook until wilted, about 2 minutes.
- Pour in heavy cream and stir in Parmesan cheese until melted and sauce thickens, about 3 minutes.
- Add cooked pasta to the skillet, tossing to coat evenly with the sauce. Season with salt and pepper.
- Serve hot, garnished with chopped parsley.
