- 1 pound Italian sausage, casings removed
- 1 onion, chopped
- 3 cloves garlic, minced
- 3 carrots, sliced
- 3 celery stalks, sliced
- 4 cups chicken broth
- 1 cup heavy cream
- 1 cup grated Parmesan cheese
- 2 tablespoons olive oil
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
Instructions
- Heat olive oil in a large pot over medium heat. Add sausage and cook until browned. Remove and set aside.
- In the same pot, sauté onion, garlic, carrots, and celery until tender, about 5 minutes.
- Return sausage to the pot, add Italian seasoning, salt, and pepper. Stir well.
- Pour in chicken broth and bring to a boil. Reduce heat and simmer for 20 minutes.
- Stir in heavy cream and Parmesan cheese, cook for another 5 minutes until heated through.
- Serve hot, garnished with extra Parmesan and fresh herbs if desired.
Notes
- This soup can be made ahead and reheated. Feel free to add some spinach or kale for extra greens.
- Adjust seasoning to taste, and for a milder flavor, use milder sausage.
