A hearty and creamy Italian sausage soup with Parmesan cheese, vegetables, and flavorful sausage, perfect for a cozy night in.

Ingredients

  • 1 pound Italian sausage, casings removed
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 3 carrots, sliced
  • 3 celery stalks, sliced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • 2 tablespoons olive oil
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat. Add sausage and cook until browned. Remove and set aside.
  2. In the same pot, sauté onion, garlic, carrots, and celery until tender, about 5 minutes.
  3. Return sausage to the pot, add Italian seasoning, salt, and pepper. Stir well.
  4. Pour in chicken broth and bring to a boil. Reduce heat and simmer for 20 minutes.
  5. Stir in heavy cream and Parmesan cheese, cook for another 5 minutes until heated through.
  6. Serve hot, garnished with extra Parmesan and fresh herbs if desired.

Notes

  • This soup can be made ahead and reheated. Feel free to add some spinach or kale for extra greens.
  • Adjust seasoning to taste, and for a milder flavor, use milder sausage.
