Instructions
- Heat olive oil in a large pot over medium heat.
- Sauté diced onion and minced garlic until fragrant and translucent.
- Add shredded chicken and cook for 2-3 minutes.
- Pour in chicken broth, bring to a boil, then reduce to simmer.
- Add gnocchi and cook until tender, about 3-4 minutes.
- Stir in heavy cream and spinach, cook until spinach wilts.
- Season with salt and pepper, garnish with parsley, and serve hot.
