  • 4 boneless, skinless chicken breasts
  • 1 cup orzo pasta
  • 1 cup cherry tomatoes, halved
  • 1 cup shredded Monterey Jack cheese

  • 3 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon smoked paprika
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a skillet, heat olive oil over medium-high heat. Season chicken with salt, pepper, Italian seasoning, and paprika. Sear until golden brown on both sides, about 5 minutes per side.

  5. Return chicken to skillet atop the orzo mixture. Sprinkle with shredded cheese.
  6. Transfer skillet to the oven and bake uncovered for 20 minutes, until chicken is cooked through and cheese is melted and bubbly.
