Instructions
- Preheat oven to 325°F (160°C). Mix graham cracker crumbs, sugar, and melted butter. Press mixture into mini muffin liners.
- In a mixing bowl, combine cream cheese, sugar, and vanilla until smooth. Add eggs one at a time, then fold in sour cream.
- Pour filling over crusts in muffin liners. Bake for 18-20 minutes until set.
- Cool completely, then top with berries and mint before serving.
