- 1 pound Italian sausage, casings removed
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 2 cups diced tomatoes
- 4 cups chicken broth
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 2 cups fresh spinach, chopped
- Salt and pepper to taste
Instructions
- In a large pot, cook Italian sausage over medium heat until browned. Remove excess fat if necessary.
- Add chopped onion and minced garlic; sauté until translucent.
- Stir in diced tomatoes and cook for 5 minutes.
- Pour in chicken broth and bring to a boil.
- Reduce heat and stir in heavy cream and Parmesan cheese until melted and smooth.
- Add chopped spinach, cook until wilted, then season with salt and pepper.
- Serve hot, garnished with additional Parmesan and fresh herbs if desired.
Notes
- For extra flavor, add a splash of red wine during cooking.
- Use full-fat cream for a richer texture.
