Instructions
- In a large pot or Dutch oven, heat a tablespoon of olive oil over medium heat. Add the Italian sausage, breaking it apart with a spatula, and cook until browned and cooked through. Remove the sausage and set aside.
- In the same pot, add diced onion and garlic, sautéing until fragrant and translucent.
- Pour in the chicken broth and diced tomatoes. Stir in Italian seasoning, salt, and pepper. Bring to a gentle simmer.
- Add the gnocchi to the simmering broth. Cook according to package instructions, about 2-3 minutes, until they float and become tender.
- Reduce the heat to low, then stir in heavy cream or milk. Add chopped spinach and cooked sausage back into the pot. Let it simmer for 5 minutes, allowing flavors to meld.
- Taste and adjust seasoning if necessary. Serve hot with crusty bread and toppings like Parmesan or fresh herbs if desired.
